Meatloaf:

2 lbs 80/20 ground beef
1 lb ground chicken
18 saltines
2 eggs
2 stalks celery fine chop
1/2 medium onion fine chop
3 or 4 dashes worchestershire sauce
season liberally with your favorite rub
( 4-Pepper Rub )

Form into two logs. Cook at 325 to an internal target temp of 165. Glaze with 2 parts BBQ sauce
( No. 5 ) and one part honey.

Leftovers: slice for sandwich, brown under the broiler for best results.

Steve,

Is it possible to make your own "ground" chicken in a food processor?
I've been wanting to make a part-chicken meatloaf like your recipe here, but I find only ground turkey at the supermarket.
I was thinking one could just run boneless thighs through the food processor, but I haven't tried it. I'm a big fan of chicken skin too so I'd probably throw that in as well.
