Truthfully I have never applied cheese to a brisket sandwich but I am cooking for a crowd and would like people to have the option. Cheddar and Pimento are the only cheeses that I have seen applied. My question is, of those that apply cheese, what is your favorite cheese? Also I was thinking more along the lines of a cheese sauce since people will be assembling their own sandwiches and I would like the cheese to be melted. Any thoughts? Thanks for you help.

I don't use cheese but were I to I'd go with goat alone, or Parrano, Jarlsberg or Gruyère alone (for their nuttiness), or one of those three mixed with goat (the goat will add a little bite).
For a sauce, use a heavy cream reduction for your base, not a white sauce or anything with flour. Do not overheat or you risk it breaking. Kevin |

I'm not sure I'd offer a cheese/cheese sauce, but if I was going to do it, I might consider a beer-cheese sauce. Just a thought... However, Kevin has a much more discriminating palate than I do. ### |

I'm not big on cheese on brisket, but I'd go with something like Havarti or Gouda.
