Where are you measuring your 400*? With coals on one side in my kettle, I have a 100*-150* difference as measured by my lid thermometer depending on whether I'm measuring directly over the coals or not. When I measure, I do it through the vent to the opposite side of the coals. |

Larry - do you start briquettes with your hose torch as well? I am doing a longer cook tomorrow and will not be using lump.

I often use my hand torch to lite briquettes in my chimmney. Works great. |
