Just a little tip: If you cook your butts fat side up you don't have to worry about all of that fat that can stick to your grate at the end of the cook. Works well and cleanup is a snap!

Oh yeah ... very little, if any trimming.

I havn't found that leaving all that fat has been benificial. IMHO it it easier to remove before the butt is cooked.


I wonder if it'd be louder with bigger wires?

I usually just cover the whole thing in rub and cook it fat side up so that it melts into the meat. It's worked well so far, but I might have to try it out with trimming.
