I was in the supermarket over the weekend and came across some polenta logs. I have wanted to try grilled polenta for a while now so I got it. Grilled to heat and get some grill marks. Topped with roasted red pepper, sliced tomato and goat cheese. Heat indirect. It was a nice light summery side.

What was the texture like? Was it grainy?
The only way I have made polenta is on the stove top. I like it thin and creamy style so I add plenty of chicken stock, half&half, and cheddar cheese. I also begin with a long saute of finely diced onions. No matter how much liquid you give it, the mixture always firms up solid as it cools. I wonder if I could scoop it like ice cream and grill rounded balls of the mixture? I am going to have to try this. Thanks for the recipe idea. |
