Planked Herbed Bacon-Wrapped Honey Mustard Boneless Chicken Thighs

I just made these last night, and they were some of the best chicken thighs I've ever tasted!

Ingredients:

Chopped fresh herbs:
• Chives
• Oregano
• Rosemary
• Sage
Granulated garlic
Onion powder or granulated onion
Olive oil
Salt and pepper
Fresh bacon
Boneless chicken thighs
Honey
Prepared mustard (yellow or your favorite kind)
Prepared horseradish

Preparation:

1. Trim chicken thighs of excess fat and other connective tissue
2. Coat thighs with olive oil
3. Lay thighs flat and season with salt, pepper, garlic and onion
4. Sprinkle each with the chopped fresh herbs
5. Roll each thigh tightly
6. Wrap thighs in bacon and secure with toothpicks
7. Place thighs back in refrigerator until ready to grill
8. Combine honey, mustard and horseradish to taste to make honey mustard
9. Smoke-roast the chicken on a hot plank for about 30 – 45 minutes, or until thickest part of thigh(s) measure 165° F
10. Remove chicken from plank and set over hot coals
11. Baste with honey mustard
12. Direct grill until caramelized
13. Remove thighs from grill
14. Tent with foil; let rest for 10 minutes then serve
