Mediterranean Chicken in Grilling Papers

Ingredients:

• 4 grilling papers (6” x 9”, preferably cherry wood)
• 1 lb. chicken breast(s)
• 2 tablespoons olive oil, more or less as needed
• 4 cloves garlic, minced or crushed, more or less as needed
• Juice and zest from 1 lemon
• Minced fresh or dried oregano
• Minced fresh or dried sage
• Minced fresh or dried thyme
• Salt and pepper to taste
• Whole scallions (to secure grilling papers)

1. Soak grilling papers and scallions in water and bourbon, or other liquid, for at least 15 minutes
2. Pound chicken flat to even thickness, if needed
3. Cut chicken into long strips
4. Mix remaining ingredients in bowl, adding olive oil as needed
5. Add chicken and marinate 30 – 60 minutes in bag in refrigerator
6. Place papers on a flat surface and evenly distribute chicken down the middle
7. Roll papers with the grain and close, securing with soaked scallions
8. Place filled papers on grill using indirect heat, about 350°
9. Bake/smoke 15 – 20 minutes or until chicken is thoroughly cooked
10. Remove chicken and serve over a bed of plain, white rice, or other rice or couscous if desired

This turned out to be a very simple, yet very flavorful recipe that both my wife and I enjoyed! A version of this recipe was printed on the packaging of the grilling papers I picked up at Cost Plus, but I changed it up a bit. I also used a large lemon that had quite a lot of juice in it, and the lemon flavor that ensued was a very good match for the style of the herbs and spices used.
