Hi all

Don't suppose you guys have a glossary somewhere do you? As an Aussie noob, I keep running into expressions I've never heard of! "Q", "Mr Brown", "fatties".

Maybe we need a Smokey Wiki Smiler

Q= Barbeque
Mr. Brown = This recipe for pork butt
Fatty=Breakfast sausage that is stuffed with something, the breadth of a rolling pin but roughly half the length
ABT=Atomic Buffalo Turd, Jalapeno peppers stuffed with cheese and wrapped in bacon, and smoked
WSM=Weber smokey mountain
ECB=El Cheapo Brinkman; the WSM's cheaper, more difficult to use counterpart
BoB-Butt over Brisket (placing pork butt on the top cooking grate, brisket on the bottom)
Tri(s)= Tri Tip, a cut of beef you probably don't have in Oz.

I'm sure somebody else will name more...

"ABT"s...easy...peasy...

Jalepeno Peppers. (as many as you want)...
Cheese...(your favorite)...I use Pepper Jack.
Bacon...
Spice Rub...

Slit the peppers and remove the seed membrane..
Stuff with cheese...
Wrap with a bacon slice...(some folks stick a toothpick in it...some don't.)
Sprinkle with rub (your favorite)...
Smoke for about an hour till bacon is cooked...

Enjoy!..

I like to add ground sausage to the cheese mixture stuffing. Adds a lot, and i find i can leave the bacon off without sacrificing much flavor and the grease from the sausage still does a lot for the jap from the inside out.

Also you don't have to worry about soaking toothpicks or securing bacon. I put the on a SS jap rack i bought and put the caps back on before smoking.

If you love the ABT action the coring tool and a rack make it convenient to prepare and put on/off the smoker
