Can't find wood chunks but good hickory, apple, mesquite and alder wood chips. To soak or not to soak; smoker box or no smoker box?

I wouldn't bother soaking them.

But I would use a smoker box or a wad them up in a ball of foil.

When the smoke stops, toss in another ball.

Foil pouch with a couple holes in it, will do the trick.

You could also layer your chips in/with your coals. Someone mentioned that on here and I tried it.
Works well and gives you a consistent amount of smoke throughout your burn.

Thanks for all of the advice! I've tried layering the chips before but it seemed to flame out too quickly. Wonder if I did it correctly. I think I'll try dry chips in a smoker box for some smoked salmon this weekend.
