**** am I tired and a have a little of the bottle flu and of course everyone want's to go to Yosemite today ugh.

Had 21 people show and we still have quite a bit left over.

Well everything turned out grand, gravy was crazy good (Thanks Doug D and Joe A) with stock from roasted legs and veggies. Got so many complements on the gravy it was almost embarrassing (almost lol). All in all a great Thanksgiving, however, I think next year we're going to take a break from hosting, too much **** work for SO and I. Next year we'll accept one of the invitations we receive to go to a family member's house and I'll bring my WSM and a bird with me.

Forgive a couple of the pictures, they were taken with my BlackBerry. Off to see if I can talk all these people into staying and and watching football.

Beautiful birds Larry! I visited with family for dinner yesterday and cooked my turkey today trying the salted method. I just pulled it and it looks great. I see you used a WSM and Kamado. What were the differences in the finished products?

that looks like a great spread, larry. yea, it can be a lot of work but fun at the same time. but soon as i go to someone elses for t day, i resolve not to do it again. one never wins.

JimK, here you go:
Drunken Yams
The measurements makes approximately 4 – 6 servings:
4 large sweet potatoes
3 cups water
1 1/2 cups brown sugar
4 tablespoons butter
1 (3 to 4-inch) cinnamon stick
1/4 teaspoon freshly grated nutmeg
1/3 cup bourbon (recommended: No. 7 Jack Daniels)
1 long strip orange peel
Preheat oven to 400 degrees F.
Wash and dry sweet potatoes and bake for 1 hour or until potatoes are soft to the touch. Remove from the oven and let cool slightly then remove skin from potatoes. Reduce oven temperature to 350 degrees F. While the potatoes are baking, combine remaining ingredients in a saucepan. Bring to a boil, then reduce the heat and simmer for 30 to 45 minutes until sauce is slightly thickened. Slice the potatoes 1/2-inch thick into a medium casserole dish. Pour syrup over them and return to the oven and bake for approximately 30 minutes.

I always up the Jack Daniels Big Grin

Biggest differences are moister product in the Kamado and fuel economy. For instance, yesterday I used 2.5 chimneys of fuel in my WSM, in the Kamado I used one, both cooks went about 4.5 hours, actually, I started the Kamado before I fired-up the WSM.

Larry, beautiful food. I found the JD Maple brind in another post of yours, but did you share the apple honey brine recipe somewhere? Which did you prefer?

Man, those pictures brought back some memories, what a hangover that was.

My preference is the Jack Daniels Maple Syrup brine. Apple honey was very good too but I can say side by side the JD bird went faster.

Funny, I was just thinking TG this am as I was writing down a shopping list to make pepper stout beef. Last year was the first time my turkey came out awesome using the wsm. Prior years I did one in the oven and one in the smoker. This year will be entirely smoker. I used the dry brine method last year. I have a 22.5" and figure I can do the dry and a wet brine. So far I'm liking Larry's JD brine.

Thanks Larry, and Jim, for the recipes. I'm going to take a shot at a couple turkeys in the next month or so to be fully prepared for turkey day.
