All natural 9.3 lb turkey overnight in a basic brine.
Consistant dome temp of 275-280'.
Used K-Blue with peacan chucks for smoke.
Breast temp hit 160' in 3 hours.
Could not believe it... probed other areas, no temp reading less than 159'.
Took it off, loosely foiled at rest for 45 minutes.
Here it is.
Very moist, very tasty.
But 3 hours?? Confused

Jim,at 325*,a turkey will cook at about 20 min/lb. So,yeah,that's about right. And the WSM is just a cooking machine. What can we say. WSM Smile

Off course here I know. I cooked a 10lb. turkey in my oven on New Years Day at 350º. It was done at 2 hrs. Wink
