I was only able to find an enhanced bird for Christmas. It is 4%. Using the apple brine form this site, should I cut down the brine time or salt in the brine.

I brined two two birds at Thanksgiving that were 8% using the prescribed amount of salt for nearly 24 hours and they were fine. At 4% like yours I would suggest you use your normal brine recipe and time, you shouldn't have any problems.

I agree with Bruce. I had to brine a 3% bird for the first time this year cause it was all I could find. It turned out fine, but did not accept the brine as much as a fresh bird will since it's already pumped with excess liquid. |

Thanks from me also. I went out today looking for a turkey breast. All I could find were enhanced. What is it with these people!?! I was going to do a beer can bird,but after mom had to cancel(husband had surgery monday),it's just going to be a few of us. Thanks again for the info.
