I had some left over pulled pork, so i took a large tortilla, spread the whole thing with guacamole (as the glue) stuffed one side if it with the pulled pork and shredded cheese. Folded it over, pressed it closed, and grilled it on the Performer. Served with salsa and sour cream.
WOW! Easy, and everyone flipped for it.

I'm going to try this tomorrow. I have a ton of leftover pulled pork and a big crowd of in-laws visiting.

I love using leftover pulled pork for mexican dishes.

I usually just take my leftover pulled pork, throw it on a soft taco shell, pour some nice sonny's sweet bbq sauce on there, and munch on it - it's almost better than eating it the night it's cooked! Cheese optional!
