I was looking to make grilled ribs with an Italian style. After finding a few recipes that seemed interesting and taking what I like from each I came up with this recipe.

Salt ribs and let them set.

while they rest, mix minced fresh sage, minced garlic and evoo.

after an hour or so spread the pesto on the ribs and allow them to marinade for several hours.

before grilling apply a rub consisting of 3 parts coarse ground pepper to 1 part coarse ground fennel seed.

roast or grill as desired.

depends on cooking temp, rib type, etc.
