Simple cook, once I got my WSM door to stay closed with bricks. Simple rub, smoke at 250 for 2 1/2 hrs. Tented after close down while the beans finished. MMM MMM good. When's the next holiday?

looks great. where did ya get the ribs ? the wife loves dino ribs but can't find any with meat. most have just fat.

George, I bought them here in Santa Rosa, maybe Safeway, I can't remember. I really like beef ribs but as you say they are hard to find with meat on them. As far as Dino Ribs, check my post from the last WSM day. I have some pics of real Dino ribs that I had the butcher cut.
